Hot Chocolate Mini Cheesecake Plant Protein Recipe
Did someone say hot chocolate, cheesecake & marshmallows all in the one sentence? This recipe is raw, vegan, protein packed, gluten & refined sugar free!
The flavour combo is one of our favourites and can potentially serve 6 (well up to 6 people depending if you eat them all and don't share them)
Ingredients:
Base:
- 1 cup almond meal
- 2 tbsp vanilla protein powder from @thenewtritionco
- 1 heaped tbsp nut butter
- 1 tbsp maple syrup
- 1 tsp coconut oil melted
- (add a splash of plant based milk if the base is too dry)
Cheesecake:
- 2/4 cup raw cashews
- 1 heaped tbsp coconut yoghurt
- 1 heaped tbsp cocoa powder
- 1 tsp maple syrup
- 1 tbsp plant based milk
Toppings:
- Vegan marshmallows @freedommallows
- Chocolate shavings
Method:
- In a mixing bowl add base ingredients and mix until combined
- In a small blender cup, add cheesecake ingredients and blitz until smooth and creamy
- (be patient, this takes time). You may need to add some milk if too thick
- Grease mini cheesecake pan with coconut oil
- Divide base evenly in the pan and press down
- Pour cheesecake on top, add a marshmallow & chocolate
- Freeze for a few hours until firm
Then all you have to do is allow some time for them to defrost before you enjoy them, with others or all to yourself :-)
